Recipe: Wheat-free oatmeal pancakes

INGREDIENTS

1 cup milk
1 cup plain yogurt
1 ½ cups large flake rolled oats
2 eggs
½ cup spelt flour
1 tsp baking soda
1 tsp baking powder
1 tsp sugar
pinch of salt

Combine the milk, yogurt and oats, and let sit for at least 30 minutes and up to overnight.

Add 2 eggs to the oat mixture, mix well.
Sift dry ingredients together.
Add wet to dry, combine until just moistened.
Pan fry with your choice of oil – we like organic coconut oil.
Top with local McCamus maple syrup.

Try it using vanilla yogurt (in which case skip the sugar). Or add a splash of organic vanilla extract to your wet ingredients. Oh and trust us, these really do taste better using a cast iron pan! They brown up perfectly.
